How do you remove electrons from a substance?

Can someone tell me a way to remove electrons from a substance. I'm uming conductors would be a ideal material that would have free electrons. If i had a block of some metal, how would i remove the electrons and give the material a positive charge? I was thinking that it could be done with a parallel plate capacitor, but i'm not sure. Any ideas and links to info is appreciated.
